Normally I only post round-ups on Mondays, but with so many great patriotic recipes, I needed to squeeze in an extra one. And let me tell you, these patriotic desserts look amazing! Check them out! (Links below the pictures.)
Summer is here and we are grilling like crazy! How about you? Bacon and potato foil wraps are one of my favorites and they’re really easy to make. But I will warn you, if you’re looking for a healthy grilling recipe, this is NOT it. Here’s what you need:
Ingredients & Supplies
8 strips of bacon, cooked and cut into bite-sized pieces (2 pieces per wrap)
8 red potatoes, thinly sliced (2 potatoes per wrap)
1 yellow onion, sliced (1/4th onion per wrap)
1 c. shredded cheddar cheese (1/4 c. per wrap)
Season-All to taste
salt & pepper to taste
4 Tbsp butter, divided (1 Tbsp. butter per wrap)
(Makes 4 foil wraps)
Set out 4 sheets of foil and spray the inside with cooking spray. Place sliced potatoes on the foil. Top with bacon, onion, cheese, Season-all, salt and pepper, and 1 Tbsp of butter.
Wrap tightly. Grill for 20-25 minutes at 350 degrees until potatoes are tender.
Open and let cool for 5 minutes before eating.

Chopped vegetable salad is my all-time favorite summer recipe. This has all of my garden favorites in one salad and is nice and light on a hot day. I add bacon to mine for a little more flavor but trust me, it’s just as good without it. And it’s easy to make!
4 ears of corn, husked (or you can substitute with one bag of SteamFresh Sweet Corn)
1 med. sweet onion, chopped
4 roma tomatoes, chopped
3 salad cucumbers, peeled and chopped
Optional–5 strips of bacon, chopped
Salt and pepper to taste
2 Tbsp. lime juice
2 Tbsp. olive oil
1 Tbsp. honey
1/2 tsp. ground cumin
Cook corn in a large pot of boiling water for 5 minutes or until tender. Once cool, cut corn from cobs.
Chop vegetables (and bacon) and place them and the corn in a large serving bowl.
In a small mixing bowl, combine olive oil, honey, lime juice and cumin. Pour over vegetables and stir well.
Refrigerate for 2-3 hours before serving.
