Confession–this S’mores Pie was kind of an accident. I had a bunch of different ingredients leftover from the holidays and thought hey, why not? I threw them all together expecting something edible but not fantastic. Wow, was I surprised! My whole family LOVED it and I think the entire pie was gone in an hour. Like my daughter Sophie says, this pie “tastes like summer.”
It’s rich, gooey, super easy to make. A couple of notes–the pie filling is thick and likes to stick to the graham cracker crust, so be careful when you transfer it to the crust. Also, my husband says it’s even better if you warm it up for about 30 seconds in the microwave.
1 lg box (5.1 oz) instant chocolate pudding mix
1 (8 oz) container Cool Whip
1 c. marshmallow creme
1 graham cracker pie shell
2/3 c. graham cracker crumbs
1 Hershey bar, broken into pieces
2 c. miniature marshmallows
In a large bowl, mix together chocolate pudding, Cool Whip and marshmallow creme until blended.
Transfer to pie shell. Be careful. The filling is sticky and will make a mess of your crust if you go too fast.
Cover the chocolate pie filling with a layer of graham cracker crumbs.
Top with marshmallows. Broil for about a minute in the oven to brown the marshmallows. Then place pieces of Hershey bar throughout.
That’s it! All that’s left is to enjoy your S’mores pie.
