My neighbors are the best. And since everyone is crazy busy this time of year, I like to give them a home-cooked meal as an early Christmas gift. They love it!
But who has time to cook for their own family let alone someone else’s? That’s what I thought too until one of my MOPS mentor moms showed me how to make this one-dish Italian Chicken and Vegetables (thanks Connie!). Everything goes into one baking dish and gets cooked together. How easy is that? Here’s what you need:
3 skinless, boneless, chicken breasts
2 cans green beans, drained
3 red potatoes, washed and cut into bite-sized pieces.
4 Tbsp. butter, melted
1 packet of Zesty Italian seasoning
2 Tbsp Parmesan cheese (optional)
1. Preheat oven to 325 degrees. Place chicken breasts in the middle of an 9×13 baking dish. Then add green beans on one side and potatoes on the other.
2. Sprinkle the entire packet of Zesty Italian Seasoning over the chicken, potatoes and green beans. (If you are using Parmesan cheese, sprinkle it over the chicken). Then pour the melted butter on top.
Cover with foil and cook for 1 hour (or until chicken is cooked all the way through) at 325 degrees.
That’s it! Dinner is served and your neighbors will love it!
