Sausage Rotel Dip makes an appearance at just about every event we host. It’s one of those staples that you know everyone is going to love and it’s really easy to make. What I love about this recipe is that I don’t have to stand over the stove and make sure the cheese doesn’t burn. I just throw it in the Crock Pot, set it on low, and forget it. I also love that it has sausage in it which not only gives it more flavor, but makes it more filling too. Here’s what you need:
1-32 oz. box Velveeta cheese, cut into cubes
1-28 oz. can Rotel tomatoes, undrained
1 lb. Jimmy Dean breakfast sausage, cooked and drained
Cook sausage in a skillet, drain and set aside.
In a large Crock Pot, mix together Rotel, Velveeta and sausage.
Cover and cook on low for 2-3 hours or until cheese is completely melted. Stir halfway through.
Serve with tortilla chips.
