Casseroles are such lifesavers, aren’t they? With 3 young kids, I don’t have 2 hours to spend in the kitchen. I need quick, easy and something my family will actually eat. Taco Casserole is one of our favorites. I serve it over tortilla chips and love the extra crunch. Here’s what you need:
1 lb. ground beef, browned and drained
1 packet taco seasoning
1 can refried beans
1 c. sour cream
1 can Rotel tomatoes, drained
1/2 c. chunky salsa
1 c. shredded Mexican blend or cheddar cheese
1. Preheat oven to 350 degrees.
2. Brown the ground beef and drain. Stir in taco seasoning and prepare according to the instructions on the seasoning packet.
3. In a large bowl, mix together sour cream, Rotel and salsa.
4. In a 2 quart rectangular baking dish, layer refried beans, the sour cream mixture, then the taco seasoned ground beef. Top with cheese.
Bake at 350 degrees for 30 minutes. Let cool for 5 minutes before serving.
