I get it. After a day or so, leftovers are done. A second meal, sure. A third? Nope. But if you’re like me, you probably hate wasting perfectly good food. So to keep from tossing it, I look for ways to make new meals that taste and look different than our tired leftovers.
Preheat oven to 400 degrees.
Lightly grease the bottoms of the muffin pan with cooking spray.
Flatten out each biscuit with your hand or a rolling pin. Form a bowl with the biscuits in each muffin cup (makes 10).
Fill each biscuit bowl with pot roast.
Bake at 400 degrees for 10 minutes. Let cool, then your mini pot roast bowls are ready to eat and your leftovers are gone!
