I use my Crock Pot all year long, especially in the summer when it’s just too hot to run the oven. Our usual summer favorites are Tangy Buffalo Chicken Sliders, BBQ Chuck Roast and Cream Cheese Chicken Chili. We love them! But I think all of us were ready to try something new. So I started playing around in the kitchen and came up with a delicious and easy Crock Pot Beef and Broccoli recipe. Here’s what you need:
1-2 lb boneless round steak, cut into strips
1 c. beef broth
4 c. broccoli florets
1 small onion, cut into wedges
1/3 c. soy sauce (if you want less salt, use reduced sodium soy sauce)
1/3 c.. brown sugar
1 tsp. ground ginger
1 tsp. garlic powder
1 Tbsp. vegetable oil
2 Tbsp. cornstarch
2 Tbsp. cold water
Sear the beef on a grill or skillet, about 1 minute on each side. Cut into strips, and place in the bottom of the Crock Pot.
In a large bowl, mix together beef broth, soy sauce, brown sugar, ginger, and garlic powder. Pour over the beef strips. Top with sliced onions and cook on low for 7 hours.
Mix together cornstarch and water in a small bowl. Add this mixture and broccoli to the Crock Pot. Continue cooking for one hour.
When broccoli and beef are tender, serve over warm white rice.
