My husband and I are eating a lot healthier these days. We not only want to set a good example for our kids, but we also want to have a ton of energy and be able to enjoy them while they’re young. We still eat our homestyle favorites, just not nearly as much. And I’m having fun trying leaner versions of my favorites which I’ll be sharing with you in the weeks to come.
I used to make roasted potatoes with a stick of butter, lots of salt and Parmesan cheese. Not anymore! I’ve cut out the butter, Parmesan and salt and replaced it with olive oil and salt-free Mrs. Dash seasoning. Here’s what I used:
4 med. red potatoes, cut into bite-sized pieces
1 Tbsp. olive oil
1 Tbsp. Mrs. Dash Garlic and Herb Seasoning
Toss cut potatoes in olive oil and Mrs. Dash. Spread out in an 8×8 baking dish.
Bake at 400 degrees for 50-60 minutes, stirring once halfway through.
Let cool for 5 minutes and serve!
