Mornings are crazy at my house. For the longest time, breakfast was me shoving a pop tart or granola bar in my daughter’s hand on her way out the door. I really wanted her to have a warm meal so I started making breakfast muffins.
My daughter likes bacon and cheese the best, but you can add any meat or veggie you want. I just mix up all the ingredients the night before, then pop them in the oven when I wake up. In 20 minutes, my family has breakfast and they can even take it with them if there’s no time left to sit down and eat.
1 c. Bisquik
4 eggs, beaten
1 package fully cooked (microwaveable) bacon, chopped
1 c. shredded cheddar cheese
4 Tbsp. butter, melted
1/4 c. milk
Makes 9 muffins
Mix all ingredients together in a large bowl.
Pour into greased muffin cups.
Bake at 350 degrees for 20 minutes. Serve warm.
