This is my mom’s oatmeal cookie recipe and to this day, it is still my favorite way to make oatmeal cookies. It’s full of all of my favorite holiday flavors–cinnamon, nutmeg, allspice and cloves, and I haven’t made a batch yet that didn’t turn out just right. Here’s what you need:
1 1/4 c. unsifted all-purpose flour
1 tsp. baking soda
1 c. butter or margarine
1/4 c. granulated sugar
3/4 c. firmly packed light brown sugar
Mix flour with baking soda and set aside. In another bowl, combine butter, sugars, pudding and spices and beat until smooth. Beat in eggs.
Gradually beat in flour mixture, then stir in oats and raisins.
Drop by rounded teaspoon on ungreased baking sheets and bake for 10 minutes at 375 degrees.
