Soup mixes make such great gifts. Not only are they a perfect homemade gift for neighbors and teachers, but also for the campers in your life. Since all you need is boiling water, this mix is one of my family’s favorites when we go camping (and a nice change of pace from hamburgers and hot dogs.)
What I like most about this potato soup mix is how versatile it is. Replace the chives with thyme and rosemary and you’ve got a yummy herbal soup. Or add some cumin, chili powder and dried jalapeno flakes, and you have a spicy potato soup. Whatever flavor you like, you can make it! For the basic recipe, here’s what you need:
1 3/4 c. instant mashed potatoes
1 1/2 c. dry milk
1 Tbsp. chicken bouillon granules
1 1/2 tsp. onion powder
1 Tbsp. dried chives
1/2 tsp. ground black pepper
1/2 tsp. salt
1/8 tsp. red pepper flakes
Combine potato flakes, dry milk, bouillon granules, onion, chives, black pepper, red pepper and salt in a bowl and stir to mix.
Pour into a 1 quart mason jar.
Attach the following instructions: To serve, place 2/3 cup soup mix in bowl. Stir in 1 cup boiling water and stir until smooth.
