Corn Casserole is another big hit with my family. It’s easy and such a favorite that I take it to potlucks a lot too and even combine it with Sloppy Joes for a yummy Sloppy Joe Cornbread Casserole!
Just a note–I made it for this post using an 8×8 casserole dish. Even though it turned out great, you do have to add an additional 15 minutes to the bake time. My recommendation–use a 9×13 dish instead. Here’s what you need:
2 eggs, beaten
1 box Jiffy corn muffin mix
1 can creamed corn
1 can whole kernel corn, drained
1 stick of butter, softened
1 c. sour cream
Preheat oven to 350 degrees.
Combine all ingredients into a large bowl and mix.
Pour into a greased 9 x 13 casserole dish. (If using an 8 x 8 baking dish, add 15 minutes to the cook time.)
Bake for 45-50 minutes until the top is golden brown. (The inside should be very moist but not runny.)
