With everything going on during the summer months, I depend on my slow cooker a lot. And one of my family’s favorite summer slow cooker recipes is barbecue pulled pork! It’s not too sweet, not too spicy–just the right blend to make everyone in my family happy. And the best part is that it’s so easy to make–just throw all of the ingredients in the Crock Pot, turn it on low, and walk away! Here’s what you need:
4-5 lbs Boston Butt
1 c. of your favorite barbecue sauce
1/4 c. distilled vinegar
1/2 c. chicken broth
2 tsp. liquid smoke
1/2 c. brown sugar
1 Tbsp. Worcestershire sauce
1/2 tsp. chili powder
1 med. onion, chopped
1 tsp. minced garlic
2 tsp. salt (or to taste)
pepper to taste
1. Lightly coat the bottom of the slow cooker with cooking spray. Place the Boston Butt in the slow cooker. Pour all ingredients over the pork. Cover and cook on low for 8-10 hours.
3. Remove the pork from the slow cooker and shred it with two forks. (Remove the bone if there is one.)
Return to the slow cooker and mix well with the barbecue liquid.
Serve on hamburger buns.
