I kind of came up with this Sloppy Joe Cornbread Casserole recipe on accident. It was one of those nights where I was trying to throw supper together with what was left in the fridge and pantry and the thought hit me–cover Sloppy Joe meat with my Granny’s cornbread casserole recipe. On the first try it turned out perfectly, so I’ve been making it this way ever since! Here’s what you need:
Sloppy Joe spice packet
1 can tomato paste
1 lb ground beef
1 1/4 c water
1 box Jiffy cornbread mix
1 can whole kernel corn, drained
1 can cream style corn
1 c. sour cream
1 stick butter, melted
2 eggs, beaten
In a large mixing bowl, combine cornbread mix, corn, sour cream, butter and eggs. Mix well and set aside.
Prepare Sloppy Joe meat according to the packet.
Spread Sloppy Joe meat on the bottom of a 9×13 baking dish.
Spread the cornbread mixture over the Sloppy Joe meat. Bake uncovered at 350 degrees for 45 minutes.
Let cool for 5-10 minutes before serving.
