Saturday breakfast is a big deal at my house. It’s the one time a week when all of our morning schedules correspond and we can sit down and enjoy breakfast together. This quiche is one of my favorites to make. Instead of pie crust, it uses Bisquick which makes it really easy to put together and gives it a more fluffy texture.
To make life easier on Saturday morning, I use microwavable bacon and I do all of my prep work the night before. That way when I wake up, all that’s left to do is stir the ingredients together and pop it in the oven.
1/2 c. Bisquick
3 eggs, beaten
1/3 c. butter, melted
1 1/2 c. milk
1/4 tsp. salt
dash of pepper
1 c. shredded cheddar cheese
1/4 c. onion, chopped
1/4 c. mushrooms, chopped
1/4 c. green peppers, diced
1/4 c. tomatoes, diced
1/4 c. bacon pieces
Place milk, eggs, Bisquick, butter salt and pepper in a large mixing bowl. Whisk for about 30 seconds.
Stir in cheese, onions, mushrooms, green peppers, tomatoes, and bacon pieces.
Pour into a 9″ greased pie plate.
Bake at 350 degrees for 45-50 minutes.
