St. Patrick’s Day is the perfect opportunity to sneak some healthy greens into kids’ diets. One of the ways I do it is with a Leprechaun Smoothie. The secret green ingredient–avocado.
Avocados are packed full of nutrients including vitamins A, B, C, E, and K, potassium, protein and fiber to name a few, so I love adding them to the menu any chance I get. And Sophie loves her new green treat!
So you’re probably wondering—can you taste the avocado? Hardly at all. You’ll notice some added texture, but that’s about it. If it’s too much texture for you, try using a jar of green baby food vegetables. Here’s what you need:
1 c. orange juice
1/4 c. vanilla yogurt
1 Tbsp honey
2 c. ice
Mix all ingredients together in a blender.
Blend until smooth.
Pour into a glass and serve cold.
