If I was stuck on a deserted island and could only eat one food for the rest of my life, it would definitely be cheesy mashed potatoes. I love them! I was playing around with a basic mashed potato recipe and really liked the addition of cheese and sour cream. It makes the mashed potatoes creamier and gives them just a little extra color.
And be sure to try red potatoes instead of russets if you don’t already. I think you’ll really like the difference in the texture and flavor. Enjoy!
3 lbs red potatoes, peeled and quartered
1/2 stick of butter
1 c. sour cream
1 c. milk
1 c. shredded cheddar cheese
salt and pepper to taste
1. Place potatoes in a large pot with enough water to cover. Bring to boil and cook until potatoes are tender but not mushy, about 10 minutes.
2. In a medium saucepan, combine milk, butter and cheese.
3. Cook uncovered on low heat until the cheese has melted, stirring often. Remove from heat.
